Abstract
The chemical structure of oligosaccharides produced by Zymomonas mobil is levansucrase (EC 2.4.1.10) was determined using enzymatic hydrolysi s, mass spectroscopy, and C-13-NMR spectroscopy. The major oligosaccha ride (98% of total oligomers) produced from transfructosylation reacti ons with -sucrose was identified as 1-kestose -fructofuranosyl-(1-->2) -beta-D-fructofuranoside).
