The results of studies of the effect of low-molecular-weight SF of dif
ferent natures (hydrocarbon and fluoride) on aqueous systems of gelati
n both in bulk and on the solution-air interface were reviewed. The ef
fect of the SF on the conformational state of the macromolecules, gela
tin particle size, surface activity, theological properties of adsorpt
ion layers and foam films, stability, and thermodynamic parameters of
free black films was examined. It was shown that gelatin modified by l
ow-molecular-weight SF is essentially a new SF.
