Beta-D-galactosidase from Kluyveromyces lactis immobilized on nylon-6
microbeads was used to hydrolyze lactose in skim milk (containing 28.6
% total solids), using a novel spin-basket reactor. More than 75% of l
actose was hydrolyzed at 34-degrees-C within a short space-time (<7 mi
n) without experiencing any plugging such as typically seen in packed
columns.
