The enzymatic hydrolysis of lignan glycosides in sesame seed was exami
ned. Beta-Glucosidase only hydrolyzed sesamolinol glycoside sufficient
ly. However, all lignan glycosides tested could be hydrolyzed by a com
bination of cellulase and beta-glucosidase. The optimum condition for
this reaction was incubation at 50-degrees-C for 20 h with a buffer (p
H 4.5-5.0). When cellulase was used with beta-glucosidase, the amount
of lignans obtained was 3 to 10 times the amount obtained without cell
ulase. The most abundant aglycon of lignan glycosides in sesame seed w
as sesaminol.
