Contamination of foodstuffs and foodstuff raw materials with foreign c
hemicals has been increasing all over the world. Thus, it is essential
to carry out residue investigations with both scientific and control
or monitoring character.While in the developing countries, the investi
gation of chlorinated hydrocarbons means the main part of monitoring p
rograms, the heavy metals, mainly lead and cadmium, are the most impor
tant sources of risk in the Central European countries. According to t
he Joint FAO/UNEP/WHO Food Contamination Monitoring Programme, Table 1
shows the lead content of raw meat samples while Table 2 shows that o
f meat and meat products in Hungary. From the point of view of food co
nsumption, investigations of mycotoxins and polychlorinated biphenyls
(PCB) and polyaromatic carcinogenic hydrocarbons reckon also with inte
rnational interest.
