Beta-Galactosidase from Saccharomyces fragilis was covalently linked b
y glutaraldehyde to chemically modified corn grits, an inexpensive mat
erial with good mechanical properties for use in bioreactors. The immo
bilized enzyme was used to hydrolyse milk-whey lactose in a recycling
packed-bed bioreactor. Quantification of external and internal diffusi
onal resistances showed that the reaction rate was not limited by diff
usion.
