The market demand for rapid and convenient food preparation has result
ed in the microwave oven becoming a familiar household appliance. The
food industry now considers microwave oven users as an important group
of consumers, particularly for value-added convenience foods. However
, the quality and safety aspects of such foods are particularly import
ant and the food processor needs to ensure that all effort is made in
the pursuit of excellence. This review highlights the microwave techno
logy available to meet these needs and focuses on recent international
activity in this area.
