Samples of lard, From national and European retail-markets, were anali
zed to determine fatty acid composition, oleic-, linoleic-, linolenic-
transisomers and 3,5-cholestadiene content, spectrophotometric values
and other parameters. Results confirm the possibility to distinguish b
etween refined and unrefined products on the bases of the analytical p
rofile, with particular regard to the 3,5-cholestadiene content.
