Methionine, methionine sulphoxide and methionine sulphone in gelatin w
ere determined simultaneously by hydrolysis with p-toluenesulphonic ac
id and then HPLC using the o-phthalaldehyde method. The IAG gelatins,
oxidized gelatins, heat-coagulable substances (HC) and sol fractions (
SF) of some gelatins were analyzed. Almost all the gelatins examined w
ere found to have been oxidized. The oxidation ratios of the HC and SF
were higher than the gelatins from which they were derived.
