Abstract
This papa presents the possibility of forming nuclei meeting the sugar industry requirement by high energy sonic field in sucrose solution o f low supersaturation. Based on the thermodynamic theory and non-linea r acoustic principle, the mechanism of sonic nucleation in sucrose sol ution is thoroughly studied. Experimental results and the prospects of sonic nucleation are discussed.
