The difference in yield and composition of the essential oil of Sature
ja obovata ('savory') has been investigated. The research included all
of its different phenological stages, in several populations of the p
rovinces of Granada and Malaga, during three consecutive years. Quanti
tative analysis of the essential oil revealed the existence of two dis
tinct groups of samples depending on their major components: (i) oxyge
nated monoterpenic derivatives and (ii) aromatic alcohols and their pr
ecursors.
