A new method for qualitative determination of 1-O-trans-p-coumaroylgly
cerol, using reversed-phase HPLC in combination with a coulometric ele
ctrode array detector, was developed. The occurrence of this ester in
maize, sorghum and beer brewed with those compounds was confirmed. The
results were verified by liquid chromatography-mass spectrometry. The
HPLC method can be used to prove an addition of maize or sorghum to m
ash in the brewing process.
