The amino acid (AA) pattern of 7 carcass parts (carcass halves, GE-tra
ct, liver, heart and kidneys, viscera, blood serum, blood cells) was d
etermined for 3 piglets weighing 5 kg and 4 X 2 piglets weighing 23 kg
; the latter had been kept in a balance trial for 45 days. In addition
the influence of a supplement of 1.5 % fumaric acid or 1.5 % citric a
cid to a basal diet was studied. Each carcass part showed a specific p
attern of AA. The age of the piglets influenced AA composition, especi
ally with regard to single AA in different carcass fractions. Organic
acid supplements did not affect the AA pattern in the carcasses.
