Abstract
The efficacy of oxidation inhibition of five natural and synthetic ant ioxidants (BHT, BHA, nordiidroguaiaretic acid (NDGA), quercetin and ru tin) was studied in O/W emulsions. Linoleic acid was used as a referen ce molecule; the reaction was initiated by an ate-compound. The k(AH) characterizing the reaction of the antioxidant with the peroxyl radica l decreases in the following order: k(AH(BHA)) > k(AH(BHT)) > k(AH(NDG A)) > k(AH(quereetin)) > k(AH(rutin)).
