Abstract
Almost 75% of the free acetaldehyde added to an uninoculated culture m edium was lost upon overnight incubation due to reaction with yeast ex tract and tryptone. In the presence of these components, liquid inject ion gas chromatography and the ALDH assay substantially overestimated acetaldehyde concentrations, highlighting the importance of head space gas chromatography in obtaining reliable estimates of the free acetal dehyde concentration.
