Abstract
The aim of this investigation was to determine the best time for harve sting kudzu roots of various ages to maximize the extractible starch. The analyses were made on raw material collected over a three-month pe riod, October-December 1991, which encompassed the first frost of the season. It was established that the highest starch content was found i n the three- to four-year-old roots, collected in December.
