In 1990 ICUMSA officially adopted new density data for pure sucrose so
lutions which were derived from precision measurements carried out in
a collaboration of the Physikalisch-Technische Bundesanstalt and the I
nstitut fur Landwirtschaftliche Technologie und Zuckerindustrie, both
in Braunschweig. These density values replace die tables of Plato orig
inating from 1900. In die basic equation the density values are given
as a function of the sucrose concentration in g/cm3 and the temperatur
e in degrees-C. For analytical and technical applications in this pape
r an equation is presented for the density as a function of the mass f
raction in g/g and the temperature in degrees-C and a second one for t
he mass fraction as a function of the density in kg/m3 and the tempera
ture in degrees-C.
