A methylglyoxal resistant yeast, Hansenula mrakii IFO 0895, was immobi
lized in the matrices of kappa-carrageenan gel and production of S-lac
toylglutathione was performed. Optimal production was achieved under t
he following conditions: pH 6.0, 30 degrees C, ratio of glutnthione an
d methylglyoxal = 1.0. By packing the gel matrices into a column, S-la
ctoylglutathione was produced continuously for over 1 week with more t
han 80% of conversion of glutathione to S-lactoylglutathione at a spac
e velocity 1 h(-1).
