Abstract
The enzymatic transformation of apigenin-7-O-beta-glucoside into apige nin is effected using beta-glucosidase from almonds. Kinetic studies g ave the following values K-m=7.63x10(-4)mol/dm(3) -1 -1 m v(max)=10.37 mu mol mg(-1) min(-1) and E(1)=65.81 kJ/mol when the substrate was pu re apigenin-7-O-beta-glucoside, while in case of apigenin-7-O-beta glu coside from dry extract of camomile ligulate flowers E(2)=65.57 kJ/mol .
