The impact of moisture content on various properties of material was s
tudied using acoustical emission. The idea consists of the analysis of
sound emission which accompanies the rupture of the product. This met
hod is characterised by its ease of adaptation and application. The pr
esent paper shows the effect of moisture content on several mechanical
properties of pasta through the evolution of their behaviour and the
analysis of acoustical signal emitted during rupture. The results show
ed a similar trend of different acoustical and mechanical parameters v
s humidity. It is therefore possible to calculate correlations between
these two sets of determinations.
