Abstract
Crystalline capsaicin, the natural mixture of capsaicinoids from Capsi cum sp. has been shown to contain by H NMR spectroscopy, < 0.3% and by HPTLC < 0.1% (Z)-capsaicin (civamide), the geometrical isomer of the major constituent.
