The grain, flour and dough quality of the octoploid tritordeum, amphip
loid derived from the cross Hordeum chilense Roem. et Schulz. x Tritic
um aestivum L em. Thell., were studied in comparison with those of dur
um and bread wheats, and hexaploid tritordeum (H. chilense x T turgidu
m conv. durum Desf. em. M.K.). Small-scale tests, commonly used for ev
aluating quality in cereals, together with the alveograph, were perfor
med. Both hexa- and octoploid tritordeum exhibited quality characteris
tics similar to those of bread wheat and very different from that duru
m wheat. Nevertheless, some genetic differences were found between hex
a- and octoploid tritordeum and between the different genetic lines us
ed of each one. This genetic variability opens the possibility that bo
th hexa- and octoploid tritordeum could be used as new genetic sources
in these kind of characters.
