Flavobacterium odoratum, a strain of elastolytic enzyme producing bact
erium was isolated from soil. It can be cultivated from a medium conta
ining poultry feather metal as a main nitrogen source producing 350 un
its per ml of cultural broth of extracellular elastolytic enzyme. The
purified elastase has a molecular weight of 21 300, and formed long, f
ine needle-shaped crystals. It showed an optimal pH at 7.4, optimum te
mperature at 50-degrees-C and was stable under 30-degrees-C and in the
range between pH 5 and pH 10. The digestibility of some protein subst
rates by the enzyme was observed
