Phenolics were extracted from potato peel waste using water or methano
l. Phenolic acids in the extracts were quantified by HPLC. The greates
t amounts of phenolic acids resulted when potato homogenate was reflux

. Four phenolic acids (chlorogenic, gallic, protocatechuic, and caffei
c) were characterized as major components. Aqueous extracts were store

ic acid had degraded to caffeic acid.
