To clarify the stability of milk gangliosides under natural acidic con
ditions in the stomach, the resistance of monosialoganglioside 3 (GM(3
)) and disialoganglioside 3 (G(D3)) to gastric juice and acid solution
s was investigated. The data presented here suggest that G(M3) and G(D
3) in milk are likely to reach the intestinal tract because over 80% o
f the sialic acid in their structure remained intact under the same ac
idic conditions found in an infant's stomach.
