Abstract
The Food Safety Act 1990 has increased the awareness of milk powder ma nufacturers of the necessity to be able to demonstrate effectively tha t due diligence is exercised at all stages of manufacture in order to assure production of safe food at all times. This paper examines the p resent day requirements for the manufacture of pathogen free milk powd ers and seeks to highlight points of interest within the industry in t he light of this new Act, subsequent EC legislation and the now mandat ory requirement to use Hazard Analysis Critical Control Point principl es of management and a recommendation to use industry guidelines and q uality systems.
