Abstract
Inhibitory effect of the fraction (CT-I) from Cassia mimosoides L. var nomame Makino on lipase activity was investigated. Fraction CT-I cont ained 54% of phenols, 95% condensed tannins and small amount of proant hocyanidin. CT-1 inhibited the activities of porcine pancreas lipase u sing 4-methylumbelliferyl oleate and tri-olein as the substrates, whic h was stronger than epigallocatechin gallate (EGCg), major tannin in g reen tea and inhibitory active component for various enzymes. The inhi bition caused by CT-I decreased with addition of casein, however compa red with case of EGCg, the amount decreased was less. The inhibitory a ctivity of CT-I was found sufficiently stable after heating for 1 h at 100-degrees-C in the pH range of 3.0 to 5.0
