Abstract
Volatile exidation products generated by thermal decomposition of tril inoleoylglycerol bis- and tris-hydroperoxides were determined during a n investigation into the mechanisms of formation of odor and flavor co mpounds in deteriorated soybean oil. Bis- and tris-hydroperoxides gene rated two and three times more total volatiles respectively than the m ono-hydroperoxide. The bis and tris-hydroperoxides generated the same volatiles but yielded less pentane and 2,4-decadienal and more hexanal as major volatiles than the mono-hydroperoxide.
