Carbohydrate-starved cultures of Lactococcus lactis subsp. lactis IL14
03 showed enhanced resistance to heat, ethanol, acid, osmotic, and oxi
dative stresses. This cross-protection seems to be established progres
sively during the transitional growth phase, with maximum resistance o
ccurring when cells enter the stationary phase. Chloramphenicol or rif
amycin treatment does not abolish the development of a tolerant cell s
tate but, on the contrary, seems to provoke this response in L. lactis
subsp. lactis.
