Abstract
The interaction of anionic, cationic, and nonionic surfactants with ge latin in aqueous media has been studied by potentiometric titration. I t is shown that the macromolecules of gelatin are modified when the ge latin binds the ionic and nonionic surfactants through hydrophobic and electrostatic interactions. This leads to conformational changes in t he bulk of the gelatin.
