Abstract
High-performance liquid gel-permeation chromatography revealed changes in the molecular weight distribution of gelatin during tanning. The t anning of acid gelatin having a high content of alpha-fraction fragmen ts proceeds with greater difficulty than the structurization of basic bone gelatin with a content of alpha-chain fragments not exceeding 5%.
