By application of anion chromatography (HPAEC) the following mean mono
saccharide contents in six beet pulp digerates clarified with aluminiu
m sulphate were found (g/kg on beet): glucose 0.623, fructose 0.227, a
rabinose 0.017, galactose 0.075 and ribose 0.076. With an enzymatic me
thod lower values for glucose and fructose were found (0.554 and 0.210
g/kg on beet). The reduction value expressed as invert sugar (RW) ave
raged to 0.898 applying the Berlin Institute method (BIM) and 0.920 g/
kg with the fluorimetric benzamidine method (related to beet weight).
The reduction equivalents of Reinefeld et al. for the above monosaccha
rides were examined and re-evaluated. Using the enzymatic results for
glucose and fructose a RW of about 95 or 92.5 %, on base of BIM or ben
zamidine method, can be calculated. More than 60 % of RW is formed by
glucose.
