Yersinia enterocolitica 0 : 3 was studied throughout two central compo
site designs to define the effects of temperature, pH and salt concent
ration on bacterial growth. Mathematical models were established by re
sponse surface methodology. The impedimetric technique was evaluated f
or its rapidity and ability to produce detection times related to bact
erial metabolism. Finally, predicted values derived from model equatio
ns were compared with observed values obtained by plate counts.
