Abstract
This paper describes the interaction of salt solutions with gelatin an d casein solutions using ultrasonic velocity and other parameters. The effect of calcium chloride, sodium lauryl sulphate and urea, on gelat in and casein at different concentrations were studied. The ultrasonic velocity and attenuation seem to be influenced not only by the salt c oncentration but also by the nature of the protein.
