Abstract
60 samples of butter from different Italian Regions have been tested t o evaluate the level of contamination by coliforms and Escherichia col i. Results generally showed satisfactory hygienic conditions of butter s. In the present work the Authors propose the microbiological limits For pasteurized butter ''quality butter'' and ordinary butter, after r eview in the Italian and E.C. laws.
