Abstract
Far-infrared heating has recently been adopted for use in certain food processing applications, because of its superiority in terms of costs and the quality of the products as compared with conventional heating . This article surveys the possible applications of far-infrared heati ng for baking (roasting), drying, thawing and pasteurization in the fo od industry.
