The essential oil of Egyptian garlic was obtained by steam distillatio
n and the oil sample investigated by gas chromatography-flame ionisati
on detection (GC-FID), GC-mass spectrometry (MS) and GC-FTIR (Fourier
transform infrared spectroscopy). As sulphur-containing main constitue
nts (concentration higher than 1%) of this oil, diallyltrisulphide (29
.7%), diallyltetrasulphide (4.4%), diallyldisulphide (3.2%), diallylsu
lphide (2.5%) and methylallyltrisulphide (2.1%) were identified.
