Abstract
The evolution of chlorophylls a and b, and total carotenoids levels we re estudied during ripening of grape berries of different cultivars of vinification grape (white and red grapes). The content of these pigme nts decrease continuosly during ripening. We have found considerable l evels of photosyntetic pigments in skin of grape in industrial maturat ion. Climatic conditions have a great influence in the levels and the evolution of these pigments.
