The effect of acid rain and of long-term storage on the concentration
of carboxylic acids in apple has been studied. The carboxylic acids ha
ve been separated by means of high performance ionic chromatography. M
alic, citric, succinic and fumaric acids have been determined. In the
case of long-term storage the malic acid content was decreased of abou
t 25%.
