Carotene cooxidation and linoleic acid peroxidation reactions catalyse
d by soybean lipoxygenase type 1 are competitive. In the presence of w
ater activity depressors (mannitol, maltose, sucrose, sorbitol), both
the cooxidation reaction (rate of carotene bleaching) and the peroxida
tion reaction (depletion of the available oxygen, conjugated diene for
mation) were modulated. In all the tested media, the carbonyl producti
on was limited by carotene. In conclusion, an explanation for the acti
on of these water activity depressors is proposed.
