The growth of Mucor 12M at low temperatures resulted in an increase of
the degree of unsaturation of both the polar and neutral lipid fracti
ons, which featured a high content of the C18:3omega6 fatty acid. The
degree of unsaturation of the lipids did not depend on the growth rate
. The increased degree of fatty acids unsaturation was accompanied by
a fall of the phosphatidyl-choline/phosphatidyl-ethanolamine ratio in
the lipids, as well as by a decline in the total content of these two
phosphatides.
