The solubilities of amino acids in ethanol+water mixtures have been de
termined at three different temperatures to understand the thermodynam
ics of transfer of amino acids from water to ethanol+water mixtures. T
he results have been interpreted in terms of structural changes in the
solvent mixtures. Attempts have been made to find out the contributio
ns of different constituent groups towards hydrophobic interactions an
d their variations with solvent composition.
