Abstract
The fermentation of milk inoculated with bacteria was monitored ampero metrically using an L-lactate biosensor and a flow-injection system. T his approach was compared with the measurement of pH. The effects of E nterococcus faecalis, Bacillus coagulans, Enterobacter sakazakii, Stap hylococcus aureus, and Bacillus sphericus were investigated. The most promising results were obtained for Staphylococcus aureus, whose ferme ntation increases milk pH.
