Abstract
The effect of EDTA on the growth of Saccharomyces cerevisiae in labora tory media was studied. It was found that addition of 2,000 ppm EDTA c ombined with a slight reduction of water activity (a(w)) to 0.95 (adju sted with glucose) resulted ingrowth inhibition. The action of EDTA co uld not be explained only by sequestering the divalent cations Ca2+ an d Mg2+.
