Phospholipid composition of canned peas has been studied on lipid extr
acts by P-31 nuclear magnetic resonance (P-31-NMR). The most abundant
phospholipids of canned peas are phosphatidylcholine and phosphatidyli
nositol in agreement with previous results obtained using other method
s. It is possible to quantify individual main phospholipids from a sin
gle experiment using P-31-NMR. This method offers important advantages
over others usually employed in phospholipid determination.
