Abstract
The optimization of the enzymatic synthesis of an analogue of jojoba o il from easily available materials in Spain was achieved. A full 2(3) factorial design at two levels was applied. The variables chosen were temperature, enzyme concentration, and pressure. A response equation w as found to determine the yield of ester.
