Salmonella surveillance in France is based upon two complementary sour
ces of data : foodborne diseases mandatory notification and Salmonella
strains collected by the National Reference laboratory for Salmonella
. Acute diarrhoea due to Salmonella is very common. Since 1986 a sharp
increase of Salmonella enteritidis infections has been observed. Eggs
contamination by Salmonella enteritidis have been found to be the mos
t common vehicle for the foodborne contaminations. This increase has b
een observed in most developped countries. Preventive guidelines as we
ll as farms controls, have been made to control the extension of S. en
teritidis foodborne infections.
