Complexes of amylose with various organic guest molecules have been st
udied by means of c.d. spectroscopy and microcalorimetry in aqueous so
lution. From the results the structure of the complexes and the mechan
ism of their formation are deduced. It is concluded that amylose can a
djust its helix conformation to the shape and structure of the guest m
olecule included. Investigations about intramolecular and intermolecul
ar crosslinking of amylose indicate that the complexing behaviour of a
mylose can be manipulated specifically.
