The muturotation reaction of alpha-D-glucose in ethanol-water solvent
in a modified commercial microwave oven, when compared with control re
actions carried out al identical temperatures, shows a non-thermal mic
rowave effect, evidenced both by a more rapid reaction and by a change
in relative amounts of alpha- and beta-D-glucose over time.
