Abstract
Polygalacturonase (EC 3.2.1.15) was purified to homogeneity from a pre paration of Geotrichum candidum 3C cellulase. The enzyme was purified 300-fold with a 60% yield of activity. The polygalacturonase has a mol ecular weight of 32 kD, pI of 4.55, and activity maximum at pH 5.0 (55 -degrees-C). When polygalacturonase decreases the viscosity of a pecta te solution by 50%, the reducing capacity of the solution increases by 0.45%.
